I’ve got to start a sheet pan dinner series, they’re seriously delicious, easy to make, and are meal prep friendly keeping you full for days. I love this specific sheet pan dinner because the taste is so flavourful and you don’t even need any sides! There is the perfect amount of complex carbs from the potatoes, vegetables from the green beans, and protein from the chickpeas.

What is a Vegan Sheet Pan Dinner

A vegan sheet pan dinner is something you can quite literally throw onto a sheet pan and have the oven be in charge of all the cooking. I prefer this method on busy days because it’s mostly hands free. The most time consuming part is chopping the veggies which can easily be resolved by purchasing pre-cut produce.

What You’ll Need

Potatoes, scallion, chickpea, oil, onion, seasoning, and green beans
  • Cooked Chickpeas
  • Green Beans– or any green vegetable of choice ex: broccoli, asparagus, etc
  • Red Onion
  • Potatoes
  • Scallion
  • Oil

Seasonings you need

  • Garlic Powder
  • Onion Powder
  • All Purpose
  • Italian Seasoning
  • Paprika
  • Cumin
  • Salt
  • Black Pepper

How to make Vegan BBQ Chickpea Sheet Pan Dinner

Step One:

Set your oven to 400 F (204 C). In the meantime, chop you potatoes into small chunks so they can cook and crispy easily. Cut your green beans into halves. Roughly chop your scallion and onion.

Line your baking tray with parchment paper (or foil) and spread the chopped potatoes along with 1 tablespoon of oil. Sprinkle black pepper and salt to taste, Cook these potatoes for 25 minutes.

Step Two:

After the time has allotted, get the tray of potatoes and add the rest of the chopped veg along with the cooked chickpeas, dry seasoning, and extra salt if necessary. Let this cook for another 20 minutes.

Once fully cooked, carefully serve while warm and enjoy!

How to Store Vegan BBQ Chickpea Sheet Pan Dinner

This vegan BBQ chickpea sheet pan dinner is great for meal prep and can last in the fridge for up to 5 days. If you need it to last longer, wait until fully cooled and store in a zip loc freezer safe bag. This can safely store in the freezer for 2-3 weeks.

When you’re ready to reheat, either allow to warm in a preheat oven (375 F) for 10 minutes, toss in a pan on the stove, or warm in the microwave.
