How to make Air fryer roasted sweet potato

1. Chop the sweet potatoes into small bite sized chunks. The smaller the better as this allows the chunks to cook faster.

2. In a medium sized bowl, toss the chunks along with black pepper, sea salt, and oil until well combined.

3. Place the seasoned sweet potato chunks into the air fryer and cook on 400 F for about 15 minutes or until fork tender and crispy.

4. The chunks should be crispy and cooked to perfection. Enjoy this healthy snack or side dish!

Air fryer vs. Oven

Both options can/will work for this recipe! In my opinion, the air fryer is supreme as it will cut cooking time in half. Cooking the sweet potato chunks in the air fryer may take between 15-20 minutes whereas an oven could take up to 40 minutes.

How to store Air fryer roasted sweet potato

Air fryer roasted sweet potatoes or even oven baked are best served fresh & hot out of the oven.

This recipe can be meal prepped however I find they start to get soggy and lose that crispy texture after a day or so. Possibly, the best way to store for meal prep (or leftovers) can be to pop them in an airtight plastic baggy for the freezer. Reheat in the air fryer as is (no extra oil) for about 5-7 minutes on 400 F and enjoy!
