This tasty and easy to make raw granola is the perfect raw vegan recipe for breakfast, packed with nutrients, and is oh-so good!

What you’ll need

  • Walnuts– Can also sub with same amount oatmeal to make nut free!
  • Sunflower Seeds
  • Pumpkin Seeds
  • Dates
  • Cinnamon
  • Vanilla
  • Coconut Flakes

Notes for making raw granola

I always soak my nuts and pumpkin seeds overnight (or for at least 4 hours) whenever I am consuming a large amount. My stomach usually can’t handle the phytic acid in raw nuts/seeds so I typically get a bad stomach when I consume them.

Phytic acid is basically a chemical compound thats commonly present in raw beans, nuts, and seeds and can be hard for some people to digest.

Whenever I soak them overnight, I’m able to consume however many nuts/seeds I desire without any issue. If you don’t have digestion problems with raw nuts/seeds, feel free to skip this step. 

I prefer to use a food processor rather than a blender because it has more surface area and pulses a lot faster and easier than a blender.

How to store raw granola

Good news! This raw granola recipe is perfect for meal prep and can last in the fridge for up to 6 days. Simply store in an airtight ziplock bag and pair with your choice milk or dairy free yogurt and enjoy.

  • Food Processor or blender

Ingredients
  

  • 1/2 Cup Walnuts can replace with oats to make nut free!
  • 1/3 Cup Pumpkin Seeds
  • 1/4 Cup Sunflower seeds
  • 1 Teaspoon Cinnamon
  • 3 Dates soft & pitted
  • 1 Teaspoon Vanilla
  • 2 Tablespoons Coconut flakes optional

Instructions
 

  • Completely optional to soak your nuts/seeds overnight (or at least 4 hours) to make this more gut friendly and easily digestible.
    Combine all the ingredients into a food processor and pulse a few times until the desired consistency has been reached.
  • Serve with your choice milk or vegan yogurt, top with fresh fruit (preferably berries) and enjoy!
