These Chocolate Chip No Bake Energy Balls are like edible cookie dough, but better! They’re completely raw vegan, refined sugar free, easy to make, and the perfect meal prep snack for school, work, or even breakfast.

I mean… you’ve got to make these. Normal cookies are loaded with white granulated sugar (even the vegan ones). Don’t get me wrong, I love a good cookie but I’m always left feeling like crap after eating them. Even the fully “plant based’ vegan ones.

Truth is, not everything with a vegan label is good for you and are often times filled with highly processed ingredients. Enjoy this easy to make, refined sugar free chocolate chip cookie alternative that will leave you feeling light and ready to take the day on!

What are Energy Balls?

Energy balls are often are often raw vegan, easy to make snacks. They often include ingredients such as nut butters, dried fruit, nuts, oatmeal, dates, and warming spices. Its like a soft gooey trail mix, but better!

These easy to make chocolate chip energy balls only have 7 ingredients and are straight to the point. They’re great for kids and, because they’re sweetened by dates and not white sugar, don’t leave me feeling groggy after eating.

What you need

  • Vegan Chocolate
  • Soaked Pitted Dates
  • Walnuts
  • Oatmeal
  • Nut Butter
  • Vanilla
  • Cinnamon

How to make Chocolate Chip Energy Balls

Step One:

First, soak the pitted dates in hot water for at least 5 minutes to get them soft and gooey. This step is extremely important or else they won’t pulse well.

Step Two:

Strain the soaked pitted dates and process or blend with the other ingredients except the chocolate chips. Be sure to scrape down the sides to have all the ingredients well combined.

Step Three:

When the “dough” batter has been made, mix in the chocolate chips with a spatula. Using your hands, form the dough into preferred sized balls. Chill in the fridge for at least 10 minutes and enjoy!

How to store Chocolate Chip Energy Balls

These delicious and simple snacks can store in the fridge for about 5-7 days making them a perfect meal prep snack! I would not suggest freezing because the texture may change during the thawing process. Good news is they’re simple to make and can be re-created in under 10 minutes or less!

These simple, quick, easy, and delicious chocolate chip energy balls are gluten free, fully raw vegan, and take under ten minutes to make!

Ingredients

  • 3/4 Cup Dates, Soaked & Pitted
  • 1/2 Cup Walnuts
  • 1/2 Cup Oatmeal
  • 1/4 Cup Nut Butter
  • 1/3 Cup Vegan Chocolate
  • Pinch Cinnamon
  • Splash Vanilla

Method

  • 1)

    Soak the pitted dates in hot water for at least 5 minutes to get them soft and gooey. This step is extremely important or else they won’t pulse well.

    Strain the soaked pitted dates and process or blend with the other ingredients minus the chocolate chips. These will be added later at the end.

Notes

Soaking the dates in hot water is necessary! If you don’t want to have any heat in this process, soak your dates beforehand in room temperature water for at least 1-2 hours.

I used a vegan chocolate bar and chopped it up into pieces but feel free to use whatever you like.

This recipe has not been tested with adding cacao powder. If added, it will change the texture. However, I have a brownie bite energy ball recipe to check out if you’re craving!
