If you’re looking for a quick and easy vegan snack that takes less than 10 minutes this is the recipe for you! These apple pie energy balls are so delicious, fully raw, and made with simple common ingredients.

These are great for a school/work snack, lunch box addition, quick breakfast, or weeknight snack. They’re so easy to make, yummy, and great for kids! I made these for my mom who’s not vegan and she loved them so much I had to make another batch! They’re heart healthy, easy to digest, and a great break into raw veganism.

What are Energy Balls/Bites?

Energy balls are created by combining easily digestible raw vegan ingredients and don’t require baking. Whether you want to make chocolate chip, brownie, pistachio, or coconut cashew they all typically require very minimal ingredients and are ready in about 5 minutes!

Raw veganism does not have to be as hard as its made out to seem! With a little bit of love and effort, many delicious meals can be created without the involvement of heat inlacing these easy no bake snacks.

What You’ll Need

Peanut butter, soaked dates, walnuts, dried apples, and cinnamon
  • Dried Apple– Must be soft/bendy dried apples and not hard/crispy freeze dried apples!
  • Soaked Dates– Very important to soak these in hot water before blending/processing!
  • Nut Butter– I used peanut butter but any nut butter or even sun flower seed butter works well!
  • Walnuts– Do not sub with any other type of nut
  • Oatmeal
  • Cinnamon
  • Vanilla

How to make Apple Pie Energy Balls

Step One: Soak the pitted dates in hot water for at least 5 minutes to get them gooey and easily blend-able.

Step Two: Combine the strained soaked dates and the rest of the ingredients into your food processor or blender. Pulse until the ingredients are incorporated, takes less than 1 minute for a food processor but is more complicated in a blender. Don’t forget to scrape the sides to make sure every bit gets in there.

Step Three: Form the dough into balls of preferred size, chill, and enjoy! *These energy bites taste better after they’ve cooled and chilled for about 10 minutes.*

Notes for making

Don’t replace the walnuts with a different type of nut. I have experimented with any other tree nut but the texture of the walnuts pulls everything together extremely well.

Any nut butter is fine for this recipe! I used peanut butter but to be honest I’m not the biggest fan of it and would have much preferred almond butter. Sunflower seed butter is also a great alternative and is smooth, creamy, and yummy!

How to store Apple Pie Energy Balls

This delicious treat can last in the fridge for 5-7 days! I would not suggest freezing as the texture of the energy bites might change during the thawing process so enjoy them for up to a week as they’re easy to make fresh!

These Apple Pie Energy balls are deliciously yummy, fully raw vegan, easy to make, and kid friendly! Only a few ingredients are required to make this quick and healthy no bake snack.

Ingredients

  • 1/2 Cup Dried Apples, must be soft and not hard!
  • 3/4 Cup Soaked pitted dates
  • 1/2 Cup Walnuts, don't replace
  • 1/2 Cup Oatmeal
  • 1/2 Teaspoon Cinnamon
  • 1/4 Cup Nut Butter, any is fine
  • Splash Vanilla

Method

  • 1)

    Soak the pitted dates in hot water for at least 5 minutes to get them gooey and easily blend-able. This step cannot be skipped because they won’t pulse easily if they’re cold and hard. If you wish to have the dates heat free, try soaking the dates for 1-2 hours before hand.

    Combine the strained soaked dates and the rest of the ingredients into your food processor or blender.

Although I used peanut butter for this recipe, any nut butter is fine. Almond butter would taste delicious and not be as overpowering as peanut!

A food processor is highly suggested for this recipe. I’ve tried to use a blender to make energy ball, hummus, and nut butters and it is always a headache. If a blender is the only kitchen equipment available, be patient and continue to scrape the sides after each pulse. May take up to 10 minutes in a blender to properly combine.
