This super easy to make and extremely refreshing chickpea salad recipe takes less than 15 minutes to put together and is protein packed and delicious!


Refreshing Chickpea Salad
This easy to make chickpea salad is super delicious, protein packed, loaded with refreshing veggies, and is perfect for hot weather!
Ingredients
- 1 Cup Cooked Chickpeas
- 1 Cucumber
- Handful Cherry Tomatoes
- 1/2 Red Bell Pepper
- 1 Tablespoon Nutritional Yeast
- 1/2 Tablespoon Oil Olive or Avocado
- 1 Tablespoon Balsamic Vinegar
- 2 Teaspoons Dried Basil
- 2.5 Tablespoons Pumpkin Seeds
- 1/8-1/4 Teaspoons Cayenne Pepper
- 1 Teaspoon Green Goddess Seasoning mine is from Trader Joes
- Salt
Instructions
- Peel and slice our cucumber into small halves. Slice your cherry tomato into halves too and chop your bell pepper into large pieces.
- Combine all of the ingredients into a bowl, toss and combine. Salt to taste and enjoy!
