Refreshing Chickpea Salad

This easy to make chickpea salad is super delicious, protein packed, loaded with refreshing veggies, and is perfect for hot weather!

- 1 Cup Cooked Chickpeas
- 1 Cucumber
- Handful Cherry Tomatoes
- 1/2 Red Bell Pepper
- 1 Tablespoon Nutritional Yeast
- 1/2 Tablespoon Oil Olive or Avocado
- 1 Tablespoon Balsamic Vinegar
- 2 Teaspoons Dried Basil
- 2.5 Tablespoons Pumpkin Seeds
- 1/8-1/4 Teaspoons Cayenne Pepper
- 1 Teaspoon Green Goddess Seasoning mine is from Trader Joes
- Salt
Peel and slice our cucumber into small halves. Slice your cherry tomato into halves too and chop your bell pepper into large pieces.
Combine all of the ingredients into a bowl, toss and combine. Salt to taste and enjoy!
