What are Energy Balls?
Energy balls are often are often raw vegan, easy to make snacks. They often include ingredients such as nut butters, dried fruit, nuts, oatmeal, dates, and warming spices. Its like a soft gooey trail mix, but better!
These easy to make chocolate chip energy balls only have 7 ingredients and are straight to the point. They’re great for kids and, because they’re sweetened by dates and not white sugar, don’t leave me feeling groggy after eating.
What you need
- Vegan Chocolate
- Soaked Pitted Dates
- Walnuts
- Oatmeal
- Nut Butter
- Vanilla
- Cinnamon
How to make Chocolate Chip Energy Balls
Step One:
First, soak the pitted dates in hot water for at least 5 minutes to get them soft and gooey. This step is extremely important or else they won’t pulse well.
Step Two:
Strain the soaked pitted dates and process or blend with the other ingredients except the chocolate chips. Be sure to scrape down the sides to have all the ingredients well combined.
Step Three:
When the “dough” batter has been made, mix in the chocolate chips with a spatula. Using your hands, form the dough into preferred sized balls. Chill in the fridge for at least 10 minutes and enjoy!
How to store Chocolate Chip Energy Balls
These delicious and simple snacks can store in the fridge for about 5-7 days making them a perfect meal prep snack! I would not suggest freezing because the texture may change during the thawing process. Good news is they’re simple to make and can be re-created in under 10 minutes or less!
