    Health Benefits of Okra

    Many people miss out on the incredible health benefits of okra due to the slimy nature of it. I’ve made this recipe for my mother (who doesn’t like slimy okra) countless times. She always loves when I cook this for her because its seasoned to perfection, not slimy, and simply delicious!

    Okra is a nutrient dense power house. It is rich in vitamin C which helps to strengthen the body’s immunity and fight illness. The vegetable can also help to lower blood sugar and may aid in better digestion. There’s an herbal method used in Jamaica that if a woman drinks okra water a few days before giving birth, she will have a seamless experience.

    What you need

    Butter beans, okra, green onion, tomato, bell pepper, garlic, thyme, scotch bonnet, dry seasoning, and coconut milk

      Seasonings You need

      dry seasonings in a small wooden bowl
      • Jamaican All Purpose Seasoning– Needed for all Jamaican inspired recipes. Use this link to grab a bottle.
      • No Salt Seasoning– One of my favorite ways of adding flavor to dishes without excessive use of salt. Get a bottle with this link.
      • Paprika
      • Garlic powder
      • Onion powder
      • Italian Seasoning
      • Black Pepper
      • Salt to taste

      How to cook Caribbean Style Okra Stew

      Step One:

      Wash all your produce accordingly. Cut each okra piece into thirds. Chop the onion, bell pepper, scallion (green onion), and tomato into fine, bite size pieces. Grate your garlic and leave your thyme and scotch bonnet whole. *Scotch bonnet pepper is very spicy, do not cut or burst or else the dish will be extremely hot.

      Step Two:

      Heal oil in a pan. Sauté your fine cut aromatic veggies in the oil for 2 minutes or until fragrant. Now, add in the dry seasoning and stir for another 2 minutes. Add in the cooked butter beans and coconut milk and allow to simmer on medium low heat for 5-7 minutes.

      Step Three:

      Add in the okra for the last 3 minutes. Do NOT overcook the okra or else it will turn extremely slimy. The less amount of time the okra cooks, the firmer the texture. Salt to taste, serve with grain of choice and enjoy!

      How to store Okra Stew (Caribbean Style)

      This delicious, creamy, and Caribbean seasoned okra stew can last about 5 days in the fridge making it great for meal prep! However, don’t let it sit more than 5 days because coconut milk tends to go bad after that time period. The taste intensifies the longer it sits making the flavor profile even more delicious as the days in the week go by. If you need it for longer, try storing in an airtight freeze safe container and freeze for up to 2 weeks.

      This delicious, easy, and well seasoned coconut Caribbean style Okra stew is going to make your taste buds jump with its delicious unique flavor profile!

      Ingredients

      • 20 pieces Okra
      • 1 Can Cooked Butter beans, 1 1/4 cup
      • 2 Tomato, chopped
      • 1 Yellow Bell pepper, chopped
      • 2 Scallion (green onion), chopped
      • 1 Onion, chopped
      • 4 cloves Garlic, grated
      • 1 Scotch bonnet peper, do not cut or burst
      • 5 stems Thyme
      • 1.5 Cup Coconut Milk
      • 3 Tsp Oil
      • 1.5 Teaspoon Jamaican All Purpose
      • 1/2 Teaspoon Paprika
      • 1 Teaspoon Garlic Powder
      • 1 Teaspoon Onion Powder
      • 1/2 Teaspoon No Salt Seasoning, I use Mrs. Dash
      • 1/2 Teaspoon Italian Seasoning
      • Pinch Black Pepper
      • Salt , to taste

      Method

      Notes

      Cutting okra into small pieces allows for more slime toe scape. If you don’t like this texture, try to cut your okra into larger bite sized pieces.

      The longer okra cook, the slimier it will get. I always add in the okra in the last 2-3 minutes of cooking to avoid the dish from becoming slimy.
