This green plantain with jerk mushrooms dish is so packed with flavor, satisfying, and the perfect Caribbean gyal appetiser.

My mom always made smashed green plantain for me growing up, and thought she was a genius and needed to trade mark it. Little did I know that other cultures also do the same thing, they just call it something different!

You can feel free to use ripe plantain with this recipe, but I prefer the savory taste of the green.

This recipe is simple to make and quite versatile. Although I am using oyster mushrooms, feel free to use whatever you have accessible. King trumpet, baby Bella, portobello, we don’t discriminate!

What You’ll Need

  • Green Plantain
  • Oyster Mushrooms- Can also replace with baby Bella or portobello mushrooms
  • Jerk Marinade
  • BBQ Sauce
  • Ketchup
  • Water
  • Oil

How to make Green plantain and jerk mushrooms

Step One:

Chop off the two ends of both your plantain and chop both in half. Now, gently slice a line down the middle of your plantain and peel the skin off.

(When you’re slicing, you should only hey the layer of the skin, do not cut into the actual plantain).

Step Two:

Prepare a pan for shallow frying and place your plantain in the pan. Allow the plantain to fully brown on each side, letting this fry for about 5 minutes in total.

Step Three:

Once the plantain is brown al all sides, CAREFULLY place a piece of parchment paper (or use a plate, your choice) on the counter along with the plantain. Using a large cutting board, smash the plantain until it has flattened to your liking.

You can choose to smash the plantain in a circle or on its side, I chose to do it on its side for preference.

Step Four:

One your plantain has been smashed, place it back into the oil and allow it t fry for another 2-4 minutes. Place them on a paper towel lined paper and set to the side.

Step Five:

Toss your cleaned mushrooms into the pan with the leftover oil, optional sprinkling with a bit of salt to draw out moisture. While that is mixing, combine your jerk paste, bbq sauce, water, and ketchup in a small bowl.

Fry your mushrooms until they’ve turned golden brown. Pour in the sauce and cover. Allow this to simmer and cook down for the next two minutes or so.

Step Six:

Once your mushroom is cooked, assemble with the green plantain and optionally top chopped scallion. Enjoy as a light appetiser with friends or by yourself!

How to store Green Plantain & Jerk Mushrooms

Green plantain & jerk mushrooms are vest served fresh off the stove. However, if you for any reason need to store them, I got you! Once cooled, store the plantain in a freezer safe ziplock bag and freeze.

Reheat in the air fryer at 400F for a few minutes until nice and crispy again. Simply re-warm the mushrooms, assemble, and they should be fine!

  • 1-2 Tablespoons Water
  • Oil
