This vibrant blue chia pudding recipe is incredibly easy to make and the perfect on the go breakfast recipe.

Blue Chia Pudding is perfect for those looking for fiber rich vegan breakfast recipes that don’t require you to slave over the stove for a tasty meal.

    Health Benefits of Blue Spirulina

    This blue powder doesn’t only look pretty, it comes with many health benefits! Blue spirulina is said to help boost the body’s immunity and ability to help fight off disease, is packed with antioxidants, and may help to better digestion!

    For those looking to add more nutrients into their diet in easy and simple ways, you can also try green spirulina powder! This powder has similar health benefits to its blue cousin, but has more protein.

    Health Benefits of Chia Seeds

    Originating from Central America, chia seeds are said to aid in better digestion (we love gut health) and may assist in weight loss! They’re also loaded with Omega 3’s and a great source of this vitamin for vegans and vegetarians.

    Chia seeds also contain a good amount of antioxidants. When paired with blue spirulina, they make this easy breakfast recipe a SUCH nutrient packed dish. And it can be easily taken on the go!

    What you’ll Need- Blue Chia Pudding

    • Blue Spirulina Powder
    • Chia Seeds
    • Vanilla
    • Dates
    • Water
    • Hemp Seeds

    How to Make Blue Chia Pudding

    Step One:

    Starting the night before (or at least 4 hours before to give proper soaking time), combine the blue spirulina, pitted dates, hemp seeds and water in a blender. Blend until smooth, there is no need for straining. Make sure the pits are removed from the dates!

    *TIP* Soaking the dates in hot water (for 2-5 minutes) will help them to blend better and not leave any clumps. Optional but much recommended.

    Step Two:

    In a small mason jar, combine the chia seeds, blue hemp milk, vanilla and stir. Close the lid and place in the fridge.

    After 10-15 minutes, go back and stir one more time to make sure everything is well combined. You will see the chia seeds already start to soak up some of the liquid and become plump. Place back in the fridge for overnight or at least 4 hours.

    Step Three:

    The next day, scoop into a bowl and top with your favorite fruits or natural sweetener and enjoy!

    How to Store Blue Chia Pudding

    Store in the fridge in a mason jar or airtight container for up to 5 days. When you’re ready to eat again, simply pop off the lid and enjoy!

    If the pudding is too thick, add a splash of milk and stir to loosen it and extra agave if needed.

    • 1 Cup Water

    • 4 Tablespoons Chia Seeds
    • 3/4 – 1 Tablespoon Blue Spirulina Powder cannot be replaced with green chia powder
    • 1 Teaspoon Vanilla

    Instructions
