These chickpea fritters are easy to make, oh so crispy, and absolutely delicious! High protein and well seasoned, this recipe is easy to freeze and perfect for meal prep too.

Why You’ll Love Chickpea Fritters
Similar to pancakes but crispy and packed with savory flavor, chickpea fritters are a really easy breakfast recipe and perfect for meal prep.
These fritters can easily be cooled, frozen, and reheated! Make 2-3x the amount and you have breakfast for the entire week!

This recipe is also very versatile and allows room for adjustments. Feel free to swap out some of the veggies or add different flavors, it’s your choice!
What You’ll Need
- Chickpea Flour
- Onion
- Garlic
- Fresh Thyme
- Bell Pepper
- Scallion
- Water
- Oil
- Jamaican All Purpose
- Onion Powder
- Garlic Powder
- Italian Seasoning
- Black Pepper
- Salt
How to make Crispy Chickpea Fritters
Step One:

Remove the stem leaves from the stem and discard the sticks. Finely chop the onion, scallion, mushroom, bell pepper, and garlic. Place these into a medium-large bowl.
Step Two:

Sprinkle the chickpea flour, salt, and dry seasonings over your chopped veggies. Mix to combine everything.
Step Three:

Now, SLOWLY pour over the water (start with a little, you might not have to use all the liquid) and carefully stir everything.
The mixture should look chunky and almost as if there is “barely” any batter and as if there are more veggies than batter. This is what makes the consistency of fritters different from pancakes.
**The mixture should NOT look like pancake or cake batter.
Step Four:

Heat a pan with oil and scoop out 2-3 tablespoons worth of batter and from small ovals/circles. Fry on each side for about 5-7 minutes before flipping.
Step Five:

Once both sides have properly cooked and are golden brown, allow them to dry on a paper towel for a few minutes and enjoy!
How to Store Crispy Chickpea fritters
Allow the fritters to completely cool before storing in ziplock baggies or freezer safe containers and placing in the freezer. To re-heat, place in the oven or air-fryer at 350 F/ 177 C for about 10 minutes and enjoy!
