sorrel (hibiscus) soda on a placemat

This sorrel soda recipe is so simple yet incredible! Made using a simple syrup concentrate and sparkling water, this drink can easily serve as a peace treaty for all of the Caribbean, Africa, and even Latin America!

Sorrel is a well beloved plant in Jamaica that originated in West Africa. It was transported to the Americas in the Caribbean when West Africans were kidnapped and brought to the West Indies for forced labor (slavery).

To me, sorrel is a sign of remembrance and resilience. And it straight up tastes delicious! It’s typically made into a drink served across the Caribbean, but let’s get creative and different!

This simple syrup is so easy to make and can be used in iced coffee, matcha, ice cream, or to make a soda. You name it!

What is a simple syrup?

For the base of this recipe, we’ll be making a sorrel simple syrup. A simple syrup is just basically a very basic syrup, typically made of sugar, water, and fruit.

Today, we’re using a combo of cane sugar and agave for the sweetener and adding some ginger for a nice punch. I prefer to make this sorrel soda with a simple syrup because it stores longer in the fridge and takes no time to assemble.

How to store sorrel soda?

It is best to store the simple syrup and sparkling water separately. Keep the simple syrup in an airtight mason jar in the fridge and combine when ready.

This syrup is incredible for a homemade “soda” and also tastes wonderful in a matcha latte or iced coffee!
