Cassava fries are very easy to make and a great way to explore the world’s other cultures through food. The taste is a lot starchier than a potato fry. So if you love regular red/Irish potatoes you’re going to absolutely lose it for these thick, starchy, satisfying cassava fries!
What is Cassava (Yuca) ?
Cassava is a starchy root that originated in South America. It was spread to other parts of the world like the Caribbean, Africa, and Asia. Thanks to the amazing, plentiful continent of South America, many cultures enjoy this root. Cassava can be found all throughout Jamaica and one of the most popular ways to enjoy is Bammy. Bammy is a gluten free flat bread made from grated cassava soaked in milk.
On the African continent, some common ways of preparing Cassava may include pounding to a sticky consistency and served as a ball alongside a flavourful stew. This cuisine is called fufu.

- Jamaican all purpose
- Paprika
- Garlic Powder

Where to find Cassava/Yuca?
Of course if you live in the Caribbean, Latin America, Africa, or Asia, cassava should not be hard for you to find. Surprisingly, cassava can be found most anywhere, even in non-diverse neighbourhoods of the USA. They will typically always be sold at asian markets. Cassava is usually always at my local everyday grocery store because it is popular amongst Latin countries, just look for the name “Yuca”.
How to make Cassava (Yuca) Fries
Step One:
Wash your Cassava very well. If purchasing in the USA, there may be a thick white wax on the outside. Peel the skin with a vegetable peeler and slice the root in half. Cut into desired sized sized fry pieces. Wash the fries to remove starch (making for a crispier fry) about twice. **There is a fibrous string in the middle of the cassava. Please make sure to discard this as its extremely tough and not edible.**
Step Two:
Set your oven to 425 F (218 C). Boil for about 25 minutes or until fork tender. Carefully strain the fries and toss in a bowl with oil and dry seasonings. Allow them to cook undisturbed in the oven for 30 minutes or until desired crispy level has been achieved.
Step Three:
Serve while warm and enjoy!
