This vegan bacon recipe is EVERYTHING you need and more! Easy to make and created with love, no pigs are harmed in this delicious, almost alkaline healthy plant based meat alternative.
What are King Trumpet Mushrooms?
Only some of the best mushrooms EVER! King trumpet mushrooms are one of my favorite meat replacements and can sometimes be used as shredded pork or chicken replacements. Keep in mind these mushrooms are compeltely different from regular oyster mushrooms.
They have a very deep, umami flavor and meaty texture, I believe they’re a staple for all vegans who don’t like store bought, heavily proessed fake meats.
Can’t find king trumpet mushrooms? No worries! I personally find these for a wonderful price at my local asian farmers market. In Southern USA, stores like Nam Dae Mun or H-mart are sure to have these. I purchased 3 large king trumpet mushrooms for about $3, so they’re quite cost affective as well! IF you purchase at the right store.
If you truly cannot find these mushrooms anywhere, you can use large portablello mushrooms with the same seasonings and method. However, highly reccomend embarking the search for the king trumpet mushrooms, you won’t regret it.
What you’ll Need- Vegan Bacon
- King Trumpet Mushrooms– If you realy cannot find these, you can try to use portabello mushrooms sliced into thin strips. However, this recipe has only been tested with king trumpet mushrooms.
- Grapeseed Oil– Or any other high heat oil like avocado.
- Agave or Maple Syrup
- Coconut Aminos- Soy free alternative, has a slightly sweet flavor. Buy a bottle using this link if you don’t have any yet.
- Paprika
- Garlic Powder
- Black Pepper
- Salt
How to make Vegan Bacon
Step One:
Preheat your oven to 400 F 204 C. Wipe, do NOT wash or submerge in water, your mushrooms with a slightly damp paper towel.
Chop of the ends and save for another purpose. Carefull slice into thin strips of your desired “bacon” cut thickness.
Step Two:
Line a baking tray with parchment paper and lay all the strips on there. Make sure the tray is not over crowdedm this will prevent them from cooking properly and getting properly crispy.
In a bowl, combine all your seasonings and oil until it comes together to form a sort of paste. Now, brush both sides of the vegan “bacon” slices with this mixture and make sure every slce is well coated and nothing is left dry.
Step Three:
Allow your vegan bacon to cook in the overn for about 20 – 25 minutes flipping at the halfway (10 minute) mark; this will depend on the thickness of your “bacon” slices, just keep an eye and don’t let them burn.
Your vegan bacon is ready once you see the ends look slighly black and the slices have cooked evenly!
How to store Vegan Bacon
Good news… vegan bacon can be stored well and used as meal prep! To store, simply allow the vegan “bacon” strips to cool and store in zpiloc baggies.
Freeze these for up to two weeks; once you’re ready to heat, pop them in the oven with a bit of oil brushed on top 400F for about 5-10 minutes. “Bacon” strips can last refridegerated for up to 7 days.
