Many people miss out on the incredible health benefits of okra due to the slimy nature of it. I’ve made this recipe for my mother (who doesn’t like slimy okra) countless times. She always loves when I cook this for her because its seasoned to perfection, not slimy, and simply delicious!

The vegetable can also help to lower blood sugar and may aid in better digestion. - Scallion (green onion)

How to cook Caribbean Style Okra Stew
Step One:
Wash all your produce accordingly. Cut each okra piece into thirds. Chop the onion, bell pepper, scallion (green onion), and tomato into fine, bite size pieces. Grate your garlic and leave your thyme and scotch bonnet whole. *Scotch bonnet pepper is very spicy, do not cut or burst or else the dish will be extremely hot.
Step Two:
Heal oil in a pan. Sauté your fine cut aromatic veggies in the oil for 2 minutes or until fragrant. Now, add in the dry seasoning and stir for another 2 minutes. Add in the cooked butter beans and coconut milk and allow to simmer on medium low heat for 5-7 minutes.
Step Three:
Add in the okra for the last 3 minutes. Do NOT overcook the okra or else it will turn extremely slimy. The less amount of time the okra cooks, the firmer the texture. Salt to taste, serve with grain of choice and enjoy!
How to store Okra Stew (Caribbean Style)
This delicious, creamy, and Caribbean seasoned okra stew can last about 5 days in the fridge making it great for meal prep! However, don’t let it sit more than 5 days because coconut milk tends to go bad after that time period. The taste intensifies the longer it sits making the flavor profile even more delicious as the days in the week go by. If you need it for longer, try storing in an airtight freeze safe container and freeze for up to 2 weeks.
