- 1/2 Head Cabbage medium sized
- 2-3 Carrots
- 1 Bell Pepper cut into fine, long strips; small or medium sized
- 3 sprigs Fresh Thyme
- 2 Scallion (aka green onion) chopped finely
- 1 Scotch Bonnet small, do NOT cut or burst
- 1/2 Onion large, red or white
- 2 cloves Garlic optional
- 1/2 Teaspoon Salt to taste
- 1 Teaspoon Garlic Powder
- 1/2 Teaspoon Curry Powder optional
- 1.5 Teaspoon No Salt Seasoning I used mrs. Dash
- 1/2 Teaspoon Jamaican All Purpose optional
Chop all the fresh produce accordingly and cut or shred the cabbage into long, thin slices.
Heat oil of choice in a pan and sauté the thyme, scallion, onion, garlic, bell peppers, and scotch bonnet (do not burst or cut, leave out if you don't like spice). Cook for at least 5 minutes
Add in the carrots followed by the dried spices (salt, garlic powder, no salt seasoning, curry), and 1/3 cup of water. Cook for about 5 minutes.
Carefully remove the scotch bonnet and thyme sprigs. Turn off the heat, serve with grain/starch of choice and enjoy!
