Creamy Fonio Porridge (Jamaican Style)

This creamy Jamaican Style fonio porridge is so easy to make, loaded with health benefits, and is the perfect West African and Caribbean combination food!

Ingredients
  

  • 1/2 Cup Fonio measured dry
  • 2 Cups Coconut Milk more or less, to taste
  • 1 Teaspoon Cinnamon
  • 1/4 Teaspoon Nutmeg
  • 1 Teaspoon Vanilla Extract
  • Coconut Condensed Milk to taste, can sub for agave
  • 1 Bay leaf small

Instructions
 

  • Pour your all of your ingredients into a pot except the condensed milk. Allow this to cook on medium-low heat for the next 5-7 minutes.
  • Fonio does not take long to cook at all, do not leave the stove. Once the porridge has thickened, Sweeten to taste with your coconut condensed milk.
  • Serve with fruit of choice and enjoy!
